Raspberry-Hazelnut Baked Oatmeal

Mornings can be a bit of a nightmare + breakfast is often last on the list. Our baked oatmeal is an easy way to meal prep a breakfast you actually crave 

INGREDIENTS

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon sea salt
  • 1 cup mashed bananas (about 2-3 bananas)
  • 1 cup Califia Farms Hazelnut Better Half, plus extra for serving
  • ¼ cup coconut sugar
  • 1/3 cup finely chopped hazelnuts, plus extra for serving
  • 1 cup fresh raspberries, plus extra for serving 

METHOD

Preheat the oven to 350° F. Spray an 8x8-inch baking pan with an oil spray. In a medium bowl, combine the oats, baking powder, cinnamon, and salt – mix to combine.

In a large bowl, combine the bananas, Better Half + coconut sugar, then whisk into a smooth mixture. Add the bowl of dry ingredients + stir to fully incorporate. Fold in hazelnuts + fresh raspberries, taking care not to smash the berries. Transfer the mixture to the prepared pan + spread into a flat layer. Bake for 35-40 minutes, or until the top is set + the sides begin to turn slightly golden. Remove from the oven + let stand for 10 minutes to let the baked oatmeal fully set. Cut into 9 squares. 

To serve, drizzle the center of a small plate with 1-2 tablespoons additional Califia Farms Hazelnut Better Half. Center a baked oatmeal square on top + top with a few extra berries + a sprinkle of chopped hazelnuts as desired. Enjoy warm or cold.
