This apple cake is made with a base of caramelized apples with Califia Farms almondmilk, tossed with a fluffy dry ingredient mixture. It is then topped with caramelized apples and walnuts with a simple yogurt drizzle.
For the Caramelized Apples
1 tablespoon vegan butter
3 apples, peeled and thinly sliced
1 tablespoon sugar
½ teaspoon cinnamon
½ cup Califia Farms Almondmilk
For the Cake
2 cups almond flour
5 teaspoons baking powder
1/4th teaspoon nutmeg
3/4th cup apple sauce
2 tablespoons maple syrup
For Your Toppings
1 apple, peeled and sliced
1 cup walnuts
4 tablespoons maple syrup
1 cup coconut yogurt
Preheat your oven to 350 degrees
Begin by making your apples. In a pan, melt vegan butter and add in your apples, sugar, cinnamon and almondmilk. Caramelize for 20 minutes until all the liquid has dissolved and your apples turn darker, and caramelized. Use medium-low heat so the apples don’t burn. Let cool.
In a bowl, toss your dry ingredients together; flour, baking powder and nutmeg. Set aside.
In a stand mixer, add in apple sauce and maple syrup, do a light mix and slowly start adding in dry ingredients until a batter forms.
Next, fold in your caramelized apples. Transfer to a buttered 8 inch circle cake pan. Bake in the oven for 35-40 minutes, and let rest for 30 minutes.
While your cake is resting. Make your caramelized apples, walnuts and drizzle.
In a pan, caramelize walnuts and apple for 20 minutes with 2 tablespoons of maple syrup.
To make your drizzle, mix maple syrup and coconut yogurt until mixed throughout in a small bowl.
Once your cake has rested, top with your apples and walnuts and your coconut drizzle. Slice and serve!
