Baked Doughnuts

These baked doughnuts are easy, satisfying, and as beautiful as they are delicious.


For the Doughnuts

1 cup all-purpose flour

¼ cup packed dark brown sugar

1 ½ tsp baking powder

¼ tsp baking soda

¼ tsp kosher salt

½ cup Vanilla Oat Milk

3 tbsp melted coconut oil

1 ¼ tsp apple cider vinegar

½ tsp vanilla extract

For the Glaze

1 cup powdered sugar, sifted

1 tsp pitaya powder

1 tbsp + 2 ½ tsp Vanilla Oat Milk



Heat oven to 350°F and lightly grease a 6 mold doughnut pan.

To a medium bowl, whisk the flour, sugar, baking powder, baking soda, and salt together until well combined.

Next, add the Vanilla Oat Milk, coconut oil, apple cider vinegar, and vanilla and whisk together until just combined. A few lumps will remain and this is fine.

Transfer batter to a ziplock bag, cut off the tip of one corner, and evenly pipe the batter into the doughnut pan.

Place the pan in the oven and bake the doughnuts for about 10 minutes. The doughnuts are done when they spring back to the touch.

Remove the doughnuts from the oven and set aside to cool.

While the doughnuts are cooling prepare the glaze. To a small bowl, add the powdered sugar, pitaya powder, and oat milk, and mix until smooth.

Once doughnuts have cooled completely, remove them from the pan and gently dip each one into the glaze to coat their tops. Enjoy immediately.
