Chocolate Ganache Layer
1 11.5 oz package Dark Chocolate Chips
Banoffee Cream Layer
13.5 Organic Heavy Coconut Cream
1 cup Powdered Sugar
1 tsp Vanilla Extract
1 tbsp corn starch
1 cup Brown Sugar
½ cup Califia Harm Better Half
8 Graham Cracker Sheets
Begin by making the chocolate ganache layer. Add dark chocolate chips to a large saucepan over low heat, stirring constantly. Once chocolate has melted completely, add ½ cup of Califia Harm Better Half. Remove from heat and continue to stir until smooth. Add to a heat safe container and allow to cool.
In a separate bowl, add heavy coconut cream, powdered sugar, vanilla extract, and cornstarch. Using a hand mixer, mix on low speed, gradually increasing to high speed. Mix on high for 3 minutes, until smooth (cream should be smooth, but will not thicken) . Add to the refrigerator until ready to use.
Add brown sugar, Califia Farms Plant Butter, and Califia Farm Better Half to a microwave safe bowl. Add to microwave for 2 minutes, stir, and microwave for an additional 2 minutes. Use caution, caramel will be very hot. Stir again and freeze for 5-10 minutes.
Add graham crackers to a Ziploc bag and crush with a dough roller until graham crackers are crushed into tiny rough pieces.
Cut up 1-2 bananas.
Begin to assemble the parfaits by adding the coconut cream layer (about 5-6 tbsps), then the graham crackers (about 2-3 tbsps), then add chocolate ganache layer (about 304 tbsps), add 3-4 slices of bananas. Top with caramel sauce and top with additional bananas and shaved chocolate (optional).
