Cauliflower Alfredo Pasta

1lb fettuccini

1/2 cup Califia Farms unsweetened almondmilk

5 roasted garlic cloves

1 tablespoon nutritional yeast

1 tablespoon olive oil

1 large head cauliflower (blanched)

1/2 cup cauliflower water

salt and pepper to taste



Blanch your cauliflower, set aside and save 1/2 cup of the water. In a blender, blend your blanched cauliflower, almondmilk, garlic cloves, nutritional yeast, olive oil, cauliflower water and salt and pepper until it gets creamy. Set aside.

In the meantime, cook your pasta according to the package instructions. When cooked, toss with your sauce, add pasta water as needed, season with salt and pepper and serve.
