This Non-Dairy Salted Caramel Mocha Latte is the perfect warm, + cozy thing to indulge in during the cooler months. While caramel + mocha are a THING on their own, this latte plays amazingly with both flavors that work so well together. Literally whipped together in a few short minutes, this homemade latte comes fully dairy-free, vegan, + gluten-free. Enjoy this caffeine-filled cup of goodness every morning or throughout the day.
INGREDIENTS:
Mocha Latte:
- 2 cups Califia Farms Barista Blend Almondmilk
- 3 Tablespoons cocoa powder, unsweetened
- 1 teaspoon dissolvable espresso powder
- 1/2 teaspoon vanilla
- 2 Tablespoons Agave or Maple Syrup
Vegan Salted Caramel:
- 1 cup pure cane sugar
- 5 Tablespoons vegan butter
- ½ cup full-fat coconut milk
TOPPINGS:
- CocoWhip!
- Vegan Salted Caramel Sauce, to drizzle
- Chocolate shavings
DIRECTIONS:
Vegan Salted Caramel:
- In a medium saucepan over medium-high heat, add sugar and cook (while stirring) until it begins to golden brown, about 4-5 minutes.
- Turn off heat and add in vegan butter, whisking until it fully melts and incorporates with sugar.
- Continuing to whisk CONSTANTLY, slowly add in coconut milk and the sauce should thicken slightly. Let sit for 5 minutes or so to cool.
- Pour sauce into a heat-safe mason jar or container and refrigerate when ready to store. NOTE: As the sauce fully cools, it will begin to thicken more and more. Stir before using.
Mocha Latte:
- In a medium saucepan on medium-high heat, add the Barista Blend milk, cocoa powder, espresso, and whisking everything together and bring it to a boil for 1-2 minutes.
- Stir in vanilla, and Agave. Remove the mixture from heat once all ingredients are incorporated and smooth.
- To serve, pour mocha latte into the prepared mug(s) and top with Cocowhip, salted caramel and garnish with shaved chocolate, optional.
