These Dark Chocolate Cupcakes are some of the best tasting chocolate cupcakes you’ll ever have! In every bite, you’ll get rich, fudgy, hints of truffle flavor goodness, made dairy-free and vegan with Califia Farms.

For the cupcakes: 

  • 1 cup Califia Farms Dark Chocolate Truffle Creamer 
  • 1 ½ cups all-purpose flour 
  • 4 tablespoons cocoa powder 
  • ½ cup cane sugar 
  • 1 ½ tablespoons baking powder 
  • ½ teaspoon baking soda 
  • 1 teaspoon sea salt 
  • 2 tablespoons vegan butter, melted 
  • 1 teaspoon vanilla extract 
  • 1 tablespoon apple cider vinegar 

For the buttercream:



      For the cupcakes:

      1. Preheat the oven to 400 degrees Fahrenheit and prep your cupcake pan with liners and cooking spray. We recommend a cupcake pan with 12 slots for your cupcakes. 
      2. In a large bowl, whisk together the flour, cocoa powder, cane sugar, baking soda, baking powder, and sea salt.
      3. To the same bowl, add Califia Farms Dark Chocolate Truffle Creamer, melted butter, apple cider vinegar, and vanilla.
      4. Using a rubber spatula, mix everything until well-combined and no lumps are visible. Be cautious to not overmix. 
      5. Scoop the batter into each cupcake liner (until the liners are about 3/4 full) and bake at 400 degrees Fahrenheit for the first 5 minutes.
      6. Then, reduce temperature to 350 degrees Fahrenheit and continue baking for another 11-13 minutes or until a toothpick inserted into the center of the cupcakes comes out clean. 
      7. Once the cupcakes are done, turn off the oven heat and keep cupcakes inside with the oven door slightly open for about 2 minutes before taking them out. 
      8. Let cupcakes cool completely before frosting.  

      For the buttercream: 

      1. In a large bowl, add the vegan butter, beating it with a hand mixer (or stand mixer) until it looks pale and smooth.
      2. While the mixer is still beating, add in the cocoa powder, powdered sugar, salt, vanilla, and Califia Farms Dark Chocolate Truffle Creamer until buttercream is creamy and fluffy. 
      3. If buttercream is too runny, add additional powdered sugar (1 tablespoon at a time). If the buttercream is too thick, add additional creamer (1 tablespoon at a time). 
      4. Add buttercream to a piping bag and pipe onto cooled cupcakes. Enjoy!
