INGREDIENTS
- 5-6 spring roll wrappers
- 1 mango thinly sliced
- 2 Persian cucumbers thinly sliced
- 2 bell peppers thinly sliced
- 1 bundle basil
Soy Ginger Dressing
- 2 tablespoons soy sauce
- 1 teaspoon minced ginger
- 1 tablespoon Unsweetened Oatmilk
- 1 teaspoon rice wine vinegar
- 1 teaspoon chili oil
METHOD
Begin by making your dressing by mixing soy sauce, minced ginger, oat ilk, rice wine vinegar and chili oil in a bowl. Set aside.
Prep your ingredients by cutting mango, cucumber, bell pepper and basil. Wet your spring roll wrappers so it is able to fold. Add your vegetable components, wrap and close the spring rolls. Dip with your dressing!
