Fresh, homemade scones with a holiday twist to fill your home with the sweet smell of our Holiday Nog.
- 2 cups unbleached all-purpose flour
- 1⁄4 cup +1 tbs coconut sugar, plus a little extra for sprinkling
- 2 3⁄4 tsp baking powder
- 1 tsp cinnamon
- 1 tsp freshly grated nutmeg
- 1⁄2 tsp sea salt
- 5 tbsp coconut oil
- 3⁄4 cup cranberries, sliced
- 1⁄2 +2 tbs cup cold Holiday Nog, plus a bit extra for brushing
METHODAdjust oven rack to the center position of the oven; heat to 400°F. Line a baking sheet with parchment paper; set aside. Place the flour, coconut sugar, baking powder, cinnamon, nutmeg, and salt, into a medium bowl and whisk to combine.
Add the coconut oil to the bowl and rub into the flour with your fingers until it begins to look crumbly. Add the sliced cranberries to the bowl, tossing a few times to coat with flour. Add the nog and stir until just combined. If the dough feels dry at all, add a splash more nog.
Turn the bowl out onto a lightly floured surface and pat the dough into a rough circle that’s about 6-inch round and 1-inch thick. Cut the dough into 6 wedges and transfer to the prepared baking sheet.
Brush each wedge with a little nog and sprinkle lightly with coconut sugar. Place in the oven and bake for about 20 minutes, or until golden and cooked through. Enjoy once cooled!
