Method

  1. Soak cashews in warm water for 20 minutes. Drain and add to a food processor along with sugar and coconut milk. Blend together until smooth, then add Califia Farms Mint Chip Oat Creamer and Califia Farms Vanilla Oatmilk. Continue to blend until all ingredients are incorporated and smooth.
  2. Pour mixture into a freezer safe container and add vegan mini chocolate chips on top. Swirl the chocolate chips throughout the ice cream with a toothpick or spoon. Cover with a lid and add to the freezer for a minimum of 4 hours, or until ice cream is set.
  3. Serve and enjoy!
