Plant-Based Shortbread Cookies by Maya's Cookies

This amazing shortbread cookie recipe from Maya Madsen of Maya's Cookies is the base recipe for some of her top-selling cookies.

INGREDIENTS

1 cup Califia Farms Butter with Olive Oil

1 cup Califia Farms butter with Olive Oil

1/4 cup Granulated Sugar

2 teaspoons Vanilla Extract

2 cups Unbleached Flour

2 cups Pecans, finely chopped

2 cups Confectioner’s Sugar, sifted

METHOD

PREHEAT OVEN TO 300 DEGREES

Combine the butter, vanilla and sugar and  blend until creamy (use an electric mixer for best results)

Add the flour and pecans, mix until combined - about 1 minute 

Using an ice cream scoop, place balls of dough on a cookie sheet lined with parchment paper, 2 inches apart.

Bake in preheated oven until the balls begin to get light brown around the edges - approximately 18 minutes.

Remove from oven and cool.

Place confectioner’s sugar in a large bowl and gently dredge the cookies one at a time until completely coated

Serve with a tall glass of your favorite Califia plant-based milk and enjoy!

PRO TIP: Replace vanilla extract with Rum extract or Add 1 teaspoon of cinnamon along with the pecans
