Pumpkin Chocolate Chip Donuts

These Pumpkin Chocolate Chip Donuts are super fluffy, soft, moist, and completely dairy-free! The perfect dessert (or breakfast, of course) for the entire family, you can whip them together in just one bowl. Welcome, Fall!

Ingredients

For the donuts:

  • 1 cup Califia Farms Pumpkin Spice Creamer 
  • 1 cup Califia Farms Unsweetened Almondmilk 
  • 1 ½ cups all-purpose flour 
  • ½ cup organic cane sugar 
  • 1 tablespoon pumpkin spice 
  • 2 teaspoons baking powder 
  • ¼ teaspoon baking soda 
  • ¼ teaspoon sea salt 
  • ¼ cup pumpkin puree 
  • 1 teaspoon apple cider vinegar 
  • 1 teaspoon vanilla extract 
  • 3 tablespoons vegan butter, melted 
  • 1 cup vegan chocolate chips, semi-sweet 

For the glaze:

 

Method

  1. Preheat oven to 375 degrees Fahrenheit and spray your donut pan.
  2. In a bowl, add Califia Farms Unsweetened Almondmilk and apple cider vinegar, whisking together well and letting it sit for 2-3 minutes. Then, add the Califia Farms Pumpkin Spice Creamer, melted butter, pumpkin puree, vanilla, and whisk everything together. 
  3. In a separate bowl, sift together the flour, baking powder, baking soda, sugar, pumpkin spice, and sea salt. Finally, stir in the dry ingredients to your wet ingredients, until just combined and batter is thick and smooth, about 2-3 minutes. Fold in the chocolate chips with a spatula. 
  4. Spoon the batter into a piping bag and pipe batter into prepared donut pan, filling them about 3/4 of the way. 
  5. Bake for 10-13 minutes or until a toothpick inserted into the donuts comes out clean. 
  6. Remove from oven and allow to cool for 5 minutes before releasing the donuts from their pan and onto a cooling rack to cool completely. 
  7. For the glaze, whisk together the powdered sugar and Califia Farms Pumpkin Spice Creamer, until a smooth consistency is met.
  8. For a thicker glaze, add additional powdered sugar. For a thinner glaze, add additional creamer. 
  9. Once donuts are fully cooled, dip each donut into the glaze and set them back onto the cooling rack so that the glaze hardens a bit. Repeat until all donuts are glazed. Enjoy!
