- 1 package puff pastry
- 2 cups pumpkin puree
- 1/4 cup maple syrup
- 1 teaspoon pumpkin pie spice
- 1/3 cup Unsweetened Oatmilk
- 1⁄2 teaspoon vanilla extract
Preheat your oven to 400 degrees and let your puff pastry thaw out.
In the meantime, heat a small pot with pumpkin puree, maple syrup, pumpkin pie spice, oat milk and vanilla extract. Let all the flavors combine and let cool.
When your puff pastry is thawed out, cut out circles with a small bowl or circle cookie cutter. Place a small scoop of the pumpkin filling in the center of one of the circles and layer on top another puff pastry circle. Use a fork to form each side together.
Place on a baking sheet and bake for 30-40 minutes until crispy, let cool and serve!
