Ingredients
- Pizza dough of your choice
- 1 cup cashews
- 3 garlic cloves
- 3 sprigs thyme
- 1 teaspoon chili powder
- ¾ cup nutritional yeast
- Salt and pepper
- 1 cup Califia Farms Oat + Almond Blend
- 1 ½ cups spinach, plus additional for topping
- 2 cups vegan mozzarella "cheese"
- 1 14-ounce can quartered artichoke hearts
- Cilantro, for garnish
- Red pepper, optional
Method
- Preheat oven to 425 degrees Fahrenheit.
- Soak cashews in water for 20 minutes. Drain the water and add garlic, thyme, chili powder, nutritional yeast, salt and pepper, and Califia Farms Oat + Almond Blend. Blend all in a blender or food processor until smooth.
- Add sauce to a saucepan and warm over medium low heat. Add ½ cup of vegan mozzarella "cheese" and spinach and cook until spinach has wilted completely, about 5-7 minutes. Stir occasionally to ensure that the sauce does not burn.
- Roll out pizza dough into desired shape. Place on a parchment lined baking sheet and spoon sauce all over the dough, leaving about ½ inch of the perimeter bare (this will form the crust).
- Top with additional mozzarella "cheese," plus artichokes and a few more spinach leaves.
- Bake for 20-25 minutes, or until the crust is golden brown and the cheese has melted. Finely chop cilantro and garnish on top of the pizza. Add red pepper if desired. Enjoy!
