Watermelon Poke with Matcha Dressing

3 cups watermelon, cubed
1/4th cup soy sauce/coconut aminos
1 tablespoon rice wine vinegar
1⁄2 tablespoon ginger, grated
1 tablespoon maple syrup
1 tablespoon olive oil
For the Dressing
1/4th cup Califia Farms GoCoconuts
2 teaspoon matcha powder
juice of 1 lime
1 tablespoon olive oil
1 tablespoon rice wine vinegar
2 teaspoons hot water
For the bowl
Rice, avocado, green onions and sesame seeds


    Preheat your oven to 350. Cube your watermelon and mix with soy sauce, rice wine vinegar, ginger, maple syrup and olive oil.

    Roast for 15-20 minutes. Let cool.

    In the meantime, make your dressing by adding matcha powder and hot water, mix well until all combined.

    Then add your GoCoconuts, lime juice, olive oil and vinegar.

    Assemble your bowl by placing in your rice and poke and topping with avocado, green onions and sesame seeds.
