Cinnamon Swirl Kings Cake

A deliciously soft and buttery king cake to celebrate Mardi Gras! This King Cake is full of delicious cinnamon and brown sugar with a vanilla glaze to top it off. It’s fun to make and even more fun to eat! This recipe was created by Britney Breaks Bread.

Ingredients

1 cup Califia Farms Almond Barista Blend
2 ¼ tsps active dry yeast
4 cups All-Purpose Flour
½ tsp salt
½ cup + 1 tbsp sugar
4 tbsp plant-based butter

Filling:
1 cup brown sugar
3 tbsp plant-based butter
1 tbsp cinnamon
Pinch of salt

Glaze:
2 cups Powdered sugar
1 tsp Vanilla
2 tbsps plant-based butter, melted
3-4 tbsps Califia Farms Almond Barista Blend
Pinch of Salt

Sprinkles:
Purple, Green, and Yellow Sprinkles!

Directions

In a small bowl, warm 1 cup of Almond Barista Blend for 30 seconds in a microwave. Add 2 ¼ tsps of active dry yeast and 1 tbsp of sugar.

Gently whisk until combined and allow yeast to bloom and become bubbly for about 10 minutes.

 Add yeast mixture, all-purpose flour, salt, remainder of sugar, and plant-based butter to a stand mixer.

Using the dough hook attachment, knead for about 5 minutes, until dough has come together and does not stick to the side of the bowl. (TIP: If dough is too sticky, add 1 tbsp of flour.)

If dough isn’t coming together, add an additional tbsp of almond milk until dough begins to form) Add dough to a well floured work surface and knead into a ball.

Add dough to a bowl and cover with plastic wrap or a towel and allow to rise for 1-2 hours in a warm space until the dough has doubled in size.

 Filling: Combine brown sugar, melted plant butter, cinnamon, and a pinch of salt in a small bowl. Mix together.

  Once dough has doubled in size, add to a well floured work surface.

Preheat oven to 350ºF.

Using a dough roller, roll out the dough into a 12x18 rectangle.

Smooth the filling onto the dough, ensuring that all of the dough is covered with a thin layer of filling.

Roll the dough lengthwise into a log. Add log to a baking sheet lined with parchment paper.

 Cut the log straight down the center, beginning the cut just below the top of the log (ensuring that the top of the log is still attached) to create two pieces of dough.

 Twist one piece of dough over the other until you get to the end.

Turn dough into a circle and fold the end piece of the dough underneath the beginning piece to close the circle.

Pinch to ensure that the dough is securely closed.

Cover with a towel and allow dough to rise again for 20-30 minutes, dough should become slightly puffy.

 Bake for 30-35 minutes, until golden brown.

To make the glaze, combine powdered sugar, vanilla, melted plant butter, almond milk, and pinch of salt and stir well.

 Drizzle glaze on top of king cake and garnish with sprinkles!
