Strawberry Pretzel Cups

We’re consistently trying to find the best no-bake dessert in the height of summer heat, and these Strawberry Pretzel Cups are at the top of our list.

Ingredients

1 cup Califia Farms Heavy Whip

2-3 tablespoons powdered sugar  

1 teaspoon vanilla bean paste, or vanilla extract 

5 ounces strawberries, tops removed, hulled, and quartered   

2-3 teaspoons granulated sugar or maple syrup 

1 tablespoon fresh squeezed orange juice, optional 

¼ cup + 1 tablespoon crushed mini pretzels (about 20) 

1 tablespoon vegan butter, melted  

½ tablespoon maple syrup

Chill a large glass or metal bowl in the freezer for about 20 minutes. Add Heavy Whip to the chilled bowl along with vanilla bean paste and 2-3 tablespoons of powdered sugar. Whip until light and fluffy. Place in the fridge for 30 minutes.

Add the strawberries and sugar to a bowl and toss to combine. Set aside.

Once the whipped cream has chilled, add the crushed pretzels, melted vegan butter, and maple syrup to a small bowl and mix to combine.

Evenly divide the pretzel mixture between two glasses, then add whipped cream. Top each glass with an equal portion of the strawberries. Serve right away and enjoy!
