Cashew Queso

Whether you’re eating it while watching sports or solo, our Cashew Queso will have you licking your fingers.

Ingredients

8 ounces soaked cashews, raw and unsalted

1/4 cup nutritional yeast 

2 teaspoons hot chili paste, calabrian chili pepper paste, chipotle in adobo, or jalapeño 

2 garlic cloves  

2 teaspoons white vinegar 

1/2 cup Califia Farms Extra Creamy Oatmilk 

Salt and pepper to taste 

Tortilla chips, cilantro, and sliced jalapeño, for serving

Soak cashews overnight in water, or pour hot water on them prior to starting this recipe. Let sit about 5-10 minutes until cooled.

In a food processor, blend soaked cashews, nutritional yeast, hot peppers of choice (or omit), garlic cloves, vinegar and Califia Farms Extra Creamy Oatmilk. Blend until smooth, thick, and creamy.

Serve in a bowl and top with cilantro and sliced jalapeño, serve with tortilla chips. Enjoy!
