Peanut Butter Overnight Oats

There’s a reason peanut butter + chocolate are a match made in heaven, and these Peanut Butter Overnight Oats are no exception.

Prep Time: 5 minutes
Servings: 1

½ cup old fashioned rolled oats 

½ cup + 2 tablespoons Califia Farms Extra Creamy Almondmilk  

2 tablespoons creamy peanut butter 

2 tablespoons vegan plain yogurt 

2-3 teaspoons maple syrup 

2 teaspoons chia seeds  

1 teaspoon flax meal 

½ teaspoon pure vanilla extract 


1 ½-2 tablespoons vegan dark chocolate chips 

Place all the ingredients, except for the chocolate chips, into a medium bowl in the order listed. Whisk until everything is well combined.
Transfer the oats to a sealable container and let sit overnight in the refrigerator. The next day, taste and add any additional sweetener or almond milk, if desired.
Microwave the chocolate chips in a small dish in 20 second increments until melted. Pour the chocolate over top of the oats, and gently spread it around to cover the top. Reseal the container and pop it into the freezer for a few minutes until the chocolate has hardened.
Remove from the freezer and enjoy!
