Sweet Potato Casserole

2 large sweet potatoes, peeled and cubed 

1/4 cup Califia Farms Unsweetened Almondmilk 

1/4 cup + 2 tablespoons light brown sugar

1/2 teaspoon ground cinnamon 

1/4 teaspoon ground nutmeg 

Kosher salt 

1/2 cups roughly chopped pecans 

Preheat the oven to 350°F and grease a medium baking dish.
In a large pot, add in sweet potatoes and fill completely with water. Bring to a boil until they are fork tender, about 15 to 20 minutes. Drain and transfer to a large mixing bowl.
Mash sweet potatoes until creamy. Add in Unsweetened Almondmilk, 1/4 cup brown sugar, cinnamon, nutmeg and salt. Mix well to combine. Place evenly in your prepared baking dish.
In a separate small bowl, toss together chopped pecans and additional 2 tablespoons of brown sugar. Top sweet potatoes with the pecan topping and bake for 20 to 25 minutes, until pecans are golden brown and the sweet potatoes are slightly browning towards the top.
Remove from the oven, cool and serve. Enjoy!
