The only difficult part of this Tiramisu recipe is waiting one hour for the mini desserts to set. Otherwise, it takes less than 15 minutes to pull together and has all the decadent flavors of the classic dessert.

4 ounces vegan cream cheese, softened  

6 tablespoons vegan yogurt 

8 ounces coconut cream, chilled solid 

4 tablespoons maple syrup 

1 teaspoon vanilla extract 

Pinch of salt 

½ cup Califia Farms Pure Black Medium Roast Cold Brew

2 tablespoons coffee liqueur (optional)

16 speculoos cookies 

Cocoa powder, for dusting 

Place the vegan cream cheese in a medium-sized bowl. Using a hand mixer, beat on medium speed until smooth and no lumps remain.
Add the vegan yogurt, coconut cream, maple syrup, vanilla, and salt to the same bowl and beat everything together until smooth and fluffy. Set aside.
Pour the cold brew and coffee liqueur (if using) into a wide, shallow bowl.
To assemble, quickly dip the bottom half of two speculoos cookies into the cold brew, then break in half and place at the bottom of a short glass. Top the cookies with roughly two heaping tablespoons of the whipped topping.
Repeat the dipping process with two more cookies, and arrange them over the bottom layer of cream. Add two more tablespoons of cream over the second layer of cookies, then dust the top with cocoa powder.
Repeat this process 3 more times until 4 servings have been made. Place in the fridge for an hour before serving and enjoy!
