Truffle Mushroom Pasta

For those cozy winter nights where pasta is the only answer to “What’s for dinner?” – this Truffle Mushroom Pasta feels way fancier than it is.

Ingredients

For the pasta:

1 pound pasta of your choice

1/4 cup pasta water

1 tablespoon olive oil 

16 ounces mushrooms, thinly sliced 

1 teaspoon truffle oil

Salt and pepper to taste 

 

For the cashew cream sauce:

1/2 cup soaked cashews 

1/4 cup nutritional yeast 

3/4 cup Califia Farms Extra Creamy Oatmilk 

1 tablespoon truffle oil 

Lemon juice, to taste 

Salt and pepper to taste

Boil water and cook pasta according to the package instructions. While the pasta is boiling, heat a skillet with olive oil and add in mushrooms with salt, pepper and truffle oil. Sauté until golden brown.

Separately, make the cashew cream sauce. To a blender, add soaked cashews, nutritional yeast, Califia Farms Extra Creamy Oatmilk, truffle oil, lemon juice, and salt and pepper. Blend until smooth.

When the pasta is done cooking, transfer to the skillet with mushrooms and adjust with salt, pepper, lemon juice and about 1/4 cup pasta water. Then add in cashew cream sauce, mix until combined, and serve.
