Blackberry Cobbler

Cobbler season! We love this Blackberry Cobbler served with dairy-free ice cream, whipped cream, or just on its own.

Ingredients

For the filling:

2 cups blackberries 

1 tablespoons flour 

2 tablespoons sugar 

1 tablespoon lemon juice 

 

For the cobbler topping:

1 cup flour 

1/4 cup sugar 

1 teaspoon baking powder 

1 teaspoon baking soda 

½ cup vegan butter, cubed 

½ cup Califia Farms Extra Creamy Oatmilk 

Salt to taste

Preheat oven to 375ºF. In a bowl, toss together blackberries with flour, sugar and lemon juice. Set aside.

In a separate bowl, add flour, sugar, baking powder, and baking soda. Mix until combined. Add in the Extra Creamy Oatmilk and cubed vegan butter. Using your hands, combine the cobbler topping by kneading to create a dough-y texture.

Transfer the blackberry filling to an oven safe baking dish and plop the cobbler topping over the blackberries.

Bake for 30-35 minutes. Remove from the oven when the batter is cooked and brown on top, and the blackberries have burst slightly. Remove from the oven and enjoy!
