Emma Chamberlain’s Cold Brew Cookie Smoothie

Ingredients

For the smoothie:

1 frozen banana

5 drops toffee stevia

2 tablespoons vanilla protein powder

3/4 cup Califia Farms Organic Almondmilk

2 droppers beauty drops (optional)

1 tablespoon almond butter

1/4 cup coconut meat

1 cup ice

 

For the cold brew concentrate:

1/4 cup Chamberlain Coffee Fancy Mouse Blend

1 1/2 cups water

 

For the raspberry coffee ganache:

1/3 cup frozen raspberries

2 tablespoons caramel

2 dates

2 tablespoons cacao powder

1/4 cup cold brew concentrate (see above for ingredients)

1/4 cup coconut cream

Pinch of sea salt

 

For the cookie crumble topping:

2 chocolate brownie thin cookies

1 teaspoon cacao nibs

Directions

Make cold brew concentrate by mixing Chamberlain Coffee Fancy Mouse Blend with water. Let sit in the fridge for at least 8 hours. Use cold brew concentrate in the ganache and save 1/2 cup to pour over the finished smoothie.

Make raspberry coffee ganache by blending frozen raspberries, caramel, dates, cacao powder, cold brew concentrate, coconut cream, and a pinch of sea salt.

Make smoothie base by blending frozen banana, toffee stevia, vanilla protein powder, Califia Farms Organic Almondmilk, beauty drops (optional), almond butter, coconut meat, and ice.

In a glass, pour the layers in the following order: pour in a little raspberry coffee ganache, a layer of coconut cream, smoothie, another layer of raspberry coffee ganache, another layer of coconut cream, and the rest of the smoothie.

Pour 1/2 cup of cold brew concentrate over the smoothie. Top with a scoop of chilled coconut cream and the crumble. Enjoy!
