Fudge Popsicles

Creamy fudge popsicles, yes please. We’ll be making this dessert all summer long!

Servings: 6

For the popsicles:

1 tablespoon + 2 ½ teaspoons cornstarch   

Pinch of kosher salt

2 cups Califia Farms Chocolate Oatmilk 

4-5 tablespoons maple syrup 

½ cup coconut cream 

1 teaspoon vanilla extract 


For the chocolate drizzle:

¼ cup mini vegan chocolate chips 

2 teaspoons coconut oil 

Add the cornstarch and salt to a large saucepan and whisk to combine. Slowly pour in the Chocolate Oatmilk, whisking constantly, until no clumps of cornstarch remain. Add the maple syrup and coconut cream and whisk to incorporate.
Set the saucepan over medium heat and, while whisking constantly, let the mixture come to a boil. Once boiling, continue whisking for an additional 2 minutes. Mix in the vanilla extract, then remove from heat.
Carefully fill each popsicle mold, cover, and insert a popsicle stick into the base of each mold. Place in the freezer overnight or until fully frozen.
For the chocolate drizzle, add the chocolate chips and coconut oil to a small saucepan and whisk over medium-low heat until melted.
Remove the popsicles from their molds and place them on a baking sheet lined with parchment paper. Drizzle the melted chocolate over each popsicle.
Place the popsicles in the freezer for a few minutes to let the chocolate drizzle harden. Once set, remove them from the freezer and enjoy!
