Korean-Inspired Cauliflower Bites

These Korean-Inspired Cauliflower Bites are tiny flavor bombs, coated in a spicy gochujang sauce!

Ingredients

For the cauliflower bites:
1 cup Califia Farms Extra Creamy Oatmilk
1 head of cauliflower, chopped into florets
2 cups breadcrumbs
1/2 cup flour
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon smoked paprika
Pinch of red pepper flakes
For the gochujang sauce:
1/2 cup brown sugar
2 tablespoons rice vinegar
2 tablespoons soy sauce
2 tablespoons gochujang
1/4 cup vegetable stock

For the cauliflower bites: Preheat your oven to 450ºF and line your baking sheet with parchment paper.

In a medium bowl, add the Califia Farms Extra Creamy Oatmilk, flour, salt, black pepper, smoked paprika, and red pepper flakes, and whisk together until fully combined and mostly smooth. Set aside.

Add bread crumbs to a separate bowl and set aside.

Dip each cauliflower floret into the batter (shaking off any excess) and then toss into the bread crumbs. Lay each cauliflower side by side on the baking sheet (about an inch apart).

Repeat until all cauliflower florets are coated. Bake for 30-35 minutes or until golden brown. For extra crispiness, put your oven on the broil setting and bake for another 5-10 minutes.

For the gochujang sauce: Place all ingredients in a medium saucepan over medium-high heat and whisk together until it begins to boil.

Reduce heat to medium-low and let it simmer for about 15 minutes or so, stirring occasionally.

Once thickened enough to your desired consistency, remove from heat and let cool.

Once cauliflower florets are crisp, remove them from oven and toss them in the sauce until fully coated.

To serve, add to a salad, tacos, pizza, with quinoa or rice, or by themselves with vegan ranch dipping sauce.
