Lemon Poppyseed Pancakes

Ingredients

1 ¼ cup all-purpose flour 

1 teaspoon baking powder 

½ teaspoon baking soda 

¼ teaspoon sea salt 

¾ cup + 1 tablespoon Califia Farms Organic Oatmilk, room temp 

2 tablespoons melted coconut oil 

3 tablespoons lemon juice  

1 teaspoon lemon zest 

1 tablespoon poppy seeds 

2 tablespoons maple syrup  

1 teaspoon vanilla extract 

Maple syrup, for serving 

Califia Farms Heavy Whip and powdered sugar, for serving

Directions

To a large bowl, add the flour, baking powder, baking soda, and sea salt, and whisk to combine.

To a medium bowl, add the Califia Farms Organic Oatmilk, coconut oil, lemon juice, lemon zest, poppy seeds, maple syrup, and vanilla extract, and whisk to combine.

Add the wet ingredients to the dry ingredients, and mix until just combined. Let the batter rest for 5 minutes. While the batter is resting, heat a non-stick skillet over medium heat. Lightly grease the pan with cooking spray, or coconut oil, and spoon ¼ cup of the batter into the pan.

Allow the pancake to cook for about 2 minutes, or until the top looks slightly dry and a few bubbles rise to the surface. Flip the pancake and cook for an additional 2 minutes or until cooked through. Repeat process for remaining batter.

Serve warm with a bit of Califia Farms Heavy Whip (whipped with powdered sugar), some maple syrup, and enjoy right away!
