Tomato Soup

There’s no better pair for this Tomato Soup than our Heavy Whip – it blends in seamlessly and brings out the rich tomato flavor we’re all here for.

2 tablespoons olive oil 

1 cup chopped onion 

2 garlic cloves, smashed 

1 ½ tablespoons tomato paste 

1 28 ounce can whole peeled tomatoes 

¾ cup veggie stock   

1 teaspoon granulated sugar, plus more to taste 

½ teaspoon kosher salt, plus more to taste 

½ teaspoon dried basil 

Fresh cracked pepper 

⅓ cup Califia Farms Heavy Whip, plus more for garnish 

Add 2 tablespoons of olive oil to a large pot set over medium heat. Once warmed, add the onions, a pinch of salt, and sauté until translucent, about 8 minutes.
Add the smashed garlic and cook for one minute, then add the tomato paste and cook for an additional minute. Add the tomatoes, vegetable stock, sugar, salt, basil, and a bit of pepper, then increase heat and simmer for 15 minutes.
Remove from heat and blend the soup using a stick blender (or regular blender) until smooth. Set the soup in a pot over low heat, and add Califia Farms Heavy Whip, stirring until combined. Taste, and add any additional seasonings as needed.
Garnish each serving of soup with a drizzle of Califia Farms Heavy Whip. Enjoy!
