Butternut Squash Soup

Ingredients
- 1 red bell pepper (roughly chopped)
- 1 white onion (roughly chopped)
- 1 butternut squash (seeds removed,roughly chopped)
- 2–3 cloves garlic
- Olive oil
- Salt & pepper
- 1 cup Califia Farms Organic Coconutmilk
- 1 cup vegetable broth
- Pumpkin seeds (for garnish)
Directions

Preheat oven to 375°F.

Scoop the seeds out of the butternut squash and roughly chop.

Place squash, bell pepper, onion, and garlic in a baking dish.

Drizzle with olive oil and sprinkle with salt and pepper.

Roast for about 1 hour, or until the squash is fork-tender.

Carefully transfer the roasted vegetables to a blender.

Add 1 cup Califia Farms Organic Coconut Milk and 1 cup vegetable broth.

Blend until smooth and creamy.

Pour into a bowl and garnish with pumpkin seeds and a drizzle of olive oil.
