Loaded Veggie Orzo

Need an easy weeknight meal? This Loaded Veggie Orzo comes together in one pan and uses frozen veggies, so you don’t even need to wash and chop. Easy-peasy.

Ingredients
  • 4 cups Califia Farms Extra Creamy Almondmilk 
  • 3 cups vegetable stock 
  • 1 cup orzo 
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano 
  • 1 cup kale, chopped  
  • 2 cups frozen vegetables (green beans, carrots, corn suggested)

In a medium saucepan or pot over medium-high heat, add in the orzo, Creamy Almondmilk, and vegetable stock, stirring until combined.

Bring to a boil and boil for 2-3 minutes before reducing heat to low and letting it simmer for 15-20 minutes.

After 10 minutes, add in the frozen veggies, chopped kale, salt, black pepper, garlic powder, onion powder, and dried oregano, stirring to combine. Let continue to cook.

Once the orzo is soft, has swelled, and the liquid has mostly evaporated, remove from heat and serve immediately.
