Cold Brew Coffee Granita

Every coffee needs a little dessert, and every dessert needs a little coffee. This Cold Brew Coffee Granita is the best of both worlds.

Pour the Medium Roast Cold Brew, maple syrup, and vanilla into a large bowl and mix together until combined. Taste and add additional maple syrup if desired
Pour the mixture into a 9x13 inch freezer-safe pan and carefully transfer to the freezer
After about 30-45 minutes, the cold brew will begin to freeze just around the edges. Use a fork to scrape the mixture together from top to bottom, making sure to break up any pieces that have begun to freeze
Place the pan back in the freezer and freeze for another 30-40 minutes, then remove from the freezer and scrape again. Repeat this process every 30 minutes until the granita is light and fluffy
When ready to serve, place a dollop or two of vegan whipped topping in the bottom of 4 or 5 cups, then divide the granita among the cups. Top each serving with another scoop of vegan whipped topping and enjoy immediately
