Pasta Al Limone

We can’t think of a better way to ring in spring than with this zesty Pasta Al Limone.

Ingredients

5 ounces dry spaghetti 

3 tablespoons vegan butter 

2 small cloves of garlic, minced 

¾ cup Califia Farms Unsweetened Almondmilk 

2 teaspoons lemon zest 

¼ cup + 2 tablespoons grated vegan parmesan cheese  

1-2 tablespoons lemon juice, to taste 

Salt, as needed 

Freshly cracked pepper, for garnish 

Thin strips of lemon peel or lemon zest, for garnish

Set a large pot of salted water to boil. Add pasta and cook until al dente (about 2 minutes shy of the boxed suggestion).

While the pasta is cooking, make the sauce. Add the vegan butter to a medium pot set over medium-low heat. Once melted, add the garlic and let sizzle until fragrant, about a minute or so making sure it doesn't burn.

Add the Unsweetened Almondmilk and lemon zest, whisk, and let simmer for 3-5 minutes. Add the vegan parmesan, stirring until melted. Add the drained spaghetti along with 1 tablespoon of the lemon juice, and toss together to incorporate.

Let the pasta cook in the sauce until it becomes noticeably thicker, about 5 minutes. Taste and add additional lemon juice and salt as needed.

Divide between two bowls, garnish with a few strips of lemon peel or lemon zest and a few cracks of fresh pepper. Enjoy while warm!
